MY GO-TO WEEKNIGHT (AND HAPPY GUMS) STEAMED KOREAN EGG SIDE DISH

.In my house, weeknights are just as busy as days at the dental office. When I want something fast, warm, and comforting, I turn to my favorite Korean Steamed Egg side dish. For my patients recovering from a dental extraction or dental work, this is my #1 recommendation because it requires zero chewing and is packed with the nutrients your body needs to repair tissue.

Korean Steamed Egg

Prep time: 5 mins | Cook time: 10 mins | Serves: 2

Ingredients

  • 4 Large Eggs
  • 1 ¾ cups Water (or chicken broth for more flavor)
  • 1/2 tsp Salt (or 1 tsp fish sauce for depth)
  • 1 ½ tsp Hondashi (Japanese instant soup stock) or Fish Sauce
  • Optional garnish: Finely chopped scallions or a drop of sesame oil
  • Pro Tip: For dental recovery, skip the toasted sesame seeds—they can get caught in surgical sites!

Kitchen Equipment

  • Korean earthenware ttukbaegi or heat-safe bowl and steamer pot

Instructions Using Ttukbaegi

  1. Combine the eggs, water or broth, salt and Hondashi or fish sauce in a ttukbaegi and whisk thoroughly.
  2. Cook the egg mixture over high heat and continue mixing as it cooks, scraping the bottom so it doesn’t burn.
  3. After 4 minutes, you will see clumps form. Keep stirring until you feel a bit of resistance as you mix.
  4. Once you feel this resistance with the clumps, stop mixing and cover the ttukbaegi with the lid. Turn the heat to low for 1-2 minutes.
  5. Completely turn off the heat and let it sit for 2-3 minutes without opening the lid.
  6. You can now remove the lid and garnish with scallions and sesame oil. (When not recovering from dental surgery, you can also garnish with sesame seeds.)
  7. Serve immediately. It’s going to be hot. If you are recovering from dental treatment and surgery, let it cool before eating.
  8. Enjoy!

Instructions Using Heat Safe Bowl and Steamer

  1. Combine the eggs, water or broth, salt and Hondashi or fish sauce in a heat safe bowl and whisk thoroughly.
  2. Remove the bubbles on the surface so it becomes smooth.
  3. Place the bowl in a steamer pot over boiling water. Cover and steam on medium-low heat for about 10–12 minutes.
  4. It’s done with the center has a slight, firm jiggle (like flan).
  5. Garnish with scallions and sesame oil. (When not recovering from dental surgery, you can also garnish with sesame seeds.)
  6. Serve immediately. If you are recovering from dental treatment and surgery, let it cool before eating.
  7. Enjoy!
